Healthy Holiday Eats
Candy canes, fudge, Santa's cookies, plates of goodies... Tis' the season. This year we are sharing with our readers a favorite recipe to provide you with a sweet, healthy and easy alternative to satisfy your holiday sweet tooth.
- 1/3 cup walnut pieces
- 3 Tbs. cider vinegar
- 2 Tbs. extra-virgin olive oil
- 1 Tbs. honey
- 1 tsp Dijon mustard
- 1/4 tsp. salt
- 1/8 tsp. freshly ground pepper
- 8 0x. baby spinach
- 2 ripe pears cored and slicked
- 1/2 cup pomegranate seeds
- 1/4 cup crumbled blue cheese
In a large bowl, mix together the vinegar, olive oil, honey mustard, salt and pepper to make the dressing. Then add the spinach, pomegranate seeds, pears and walnuts to the bow and gently toss to coat with the dressing.
*Tip - slice and prepare the pears just before serving the salad
